Makes 1 loaf
1 3/4 all-purpose flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 up sugar
1 large egg
1/2 cup milk
1 1/2 cups ripe mashed bananas
1/3 cup canola oil
3/4 - 1cup chocolate chips
*Preheat oven to 350°
*Combine dry ingredients in a large bowl, whisk together and set aside
*In a separate bowl mix together mashed bananas, eggs, oil and milk
*Add wet mixture to dry ingredients and combine until just mixed Do not over mix
*Fold in chocolate chips
*Pour into a greased loaf pan (roughly 8x4). Bake 1 hour or until tooth pick inserted in center comes out clean. Cool in pan 10 minutes, then transfer to cooling rack to finish cooling. Slice and enjoy!
Makes approximately 5 dozen
1 cup softened butter
1 cup creamy peanut butter
1 cup lightly packed brown sugar
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 1/2 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons baking soda
1 tablespoon corn starch
*In electric mixer, beat butter, peanut butter and sugar on medium speed until creamy. Add eggs, and mix well
*Combine dry ingredients in a separate bowl and whisk to lightly sift together
*Add dry ingredients slowly to wet and mix until combined. Do not over mix
*Scoop 2" balls onto lined baking sheet and refrigerate at least one hour
*Preheat oven 375° and bake for 11 minutes or until desired doneness. Let cool on pan 2 minutes then on cooling rack to finish. ENJOY!
